In a kitchen a cloth is judged on two things: that it absorbs and that it leaves no lint on the plate. The 70/30 model at 55×55 cm is the general-purpose one, dries sooner and lasts more cycles; the 100% cotton at 50×50 cm, in twill weave and several colours, absorbs more and lets you colour-code kitchen areas, which is what a hygiene plan asks for. Both go through the industrial cycle and are sold in packs.
